Over 1700 smallholders deliver their coffee cherries to the Gahahe washing station, located in Gahahe in Kayanza province.
During the harvest season, all coffee cherries are selectively hand-picked. Most families only have 200 to 250 trees.
Once the families deliver coffee cherries to the washing station, the cherries first undergo hand sorting, and then they are de-pulped. After that, coffee is dry-fermented for up to 12 hours and soaked in clean mountain water. The last step is to dry the coffee on drying beds for 2 to 3 weeks.
